Recap: My First Cooking Lesson

Today I had my first cooking lesson with Lisa. I bought everything this morning when I got back from San Antonio. I think this was the first time my Whole Foods shopping cart was completely full. It felt good to buy some new items that I have never tried before. Lisa is going to email me the recipes and I will post them soon. I am shocked to say that I liked everything we made.  Here is my basic recap with some photos:

We started off with a chocolate drink that had chocolate powder, frozen honeydew, a small amount of water and a couple drops of stevia. I have to say that it tasted EXACTLY like a Wendy’s frosty. I am not saying it was close, I am saying that it was a complete duplicate – the icy consistency and the taste was simply amazing. I forgot to take a picture of this frozen drink so I guess I will have to make some soon (wink wink).

Beet Soup

From there we headed into the vegetable area and made a beet soup. I don’t think I have ever eaten beets before and generally soup for me was either matzoh ball at the deli or a can of Cambells. This was really quite good. I believe the beet soup has beets, some bay leaves, some onions and some seasonings. Apparently you want to be careful touching the beets with your hands because the beets can stain. Lisa just put a plastic sandwich bag over her hands while cutting to prevent the beets from coming in contact with her hands.

Sweet Potato Slices

I remember my mother and sister making a sweet potato pie for thanksgiving but I never ate it. Lisa and I made a very basic dish but really quite tasty and could work as a nice snack or a great appetizer for a dinner party (stick some colored toothpicks in each piece). We took lightly steamed sweet potatoes and then sprinkled cinnamon on them. They were nice and soft and the cinnamon really gives the sweet potato slices a nice taste.

Tilapia and Kale Salad Spring Rolls

I would call this the “entree” of the items we made. We took spring roll wrappers from Thailand, added a good amount of a kale salad, some spring mix salad greens and a piece of tilapia and wrapped each one tightly. I think it makes a great presentation and would work really well for a dinner party.
