My First Meatless Monday!

fruit and vegetablesDuring my session with Linda last week, she suggested I might want to try giving “Meatless Mondays” a try. She mentioned it at the end of the session so we didn’t talk about the concept much (I hope to discuss further in our next session so I know what to eat/avoid) but I am guessing the idea is simple – on Monday I should eat only fruits and vegetables. I’ve been pretty close to this anyway as I only have been eating chicken and eggs as of late.

Here’s a recap of what I ate throughout the first Meatless Monday:

Morning: 40 ounce smoothie with strawberry, banana, spinach, a few blueberries, apple juice and acai berry powder

While lately I’ve been doing 24oz morning smoothies and last week moved up to 32 ounces, I decided to go up another notch so that I could drink 20 ounce early morning and 20 ounce mid-morning.

Late morning: good cardio workout

Lunchtime/Afternoon: decided to go with a “mono meal” of all watermelon. Luckily I bought a watermelon that was amazingly juicy so it was really easy to eat. I consumed approximately 2.2 pounds of watermelon across the lunch/afternoon time slot. Believe it or not, pictured in the bowl below is just over 3 pounds of watermelon.

Dinner: For dinner I prepared a few vegetables. Even without the chicken, I definitely felt full after eating. Pictured below: 3/4 english cucumber, 1 large tomato, 1 large garnet sweet potato and 1/3 pound of dill roasted carrots. Not pictured: some spring mix salad greens.

After dinner I had an awesome skype video chat with my 1 year-old niece. She knows lots of sounds animals make!

Evening snack: Apple – pretty large too – very tasty, I really enjoy the evening apple.
